Mexican Guacamole

This Memorial Weekend, you will definitely want to include fresh Mexican Guacamole on your table. Avocados are a famously healthy source of omega-3 fatty acids, but did you know that they are also high in heart-healthy soluble fiber? Half an avocado has as much potassium as a banana, which is great on a hot day when you are sweating a bunch. Cilantro, tomato, onion, and lime all bring their own health benefits, vitamins, minerals, and antioxidants to the table, too.


Even though tortilla chips are the classic option, consider serving this with fresh veggies or whole grain chips for that added health benefit!

Ingredients

4 medium avocados

1 bunch fresh cilantro

1 small tomato

¼ medium red onion

5 key limes or 3 medium limes

Salt and pepper to taste

Dash cumin to taste

Queso fresco (or feta) to taste


Steps

  1. Mash up all the avocados to the preferred chunky consistency

  2. Finely dice the tomato, onion, and cilantro. Mix into the avocado.

  3. Add the lime juice, salt, pepper, and cumin to the mixture to taste.

  4. Top it off with your preferred amount of queso fresco or feta and serve!
