Blueberry Energy Bites

These blueberry bites are rich in fiber, protein, healthy fats, and antioxidants. They are also a healthy way to "fuel" a workout, power through an afternoon slump, or get a few extra calories in when you're trying to maintain or gain weight. Pair with a large glass of refreshing water and you have a great snack!


Ingredients

1 cup dry old-fashioned oatmeal (also known as rolled oats)

1 cup unsweetened coconut flakes

4 medjool dates (pitted)

1 Tbsp nut butter (your choice)

1 cup blueberries, fresh or frozen

Pinch salt

1 cup unsweetened shredded coconut



Steps

  1. Place oatmeal, coconut flakes, pitted dates, and nut butter into a food processor or blender and run until everything is well-combined.

  2. Add blueberries and a pinch of salt, and pulse a few times or until it looks blended. If necessary, use a spoon to stir and mix everything, and then pulse a few more times to bring it all together.

  3. Shape mixture into small balls and roll them in the shredded coconut.

  4. Enjoy immediately or store them in the freezer to last longer.
