Avocado & Herb "Ranch" Dressing and Dip

This is a homemade salad dressing that will elevate your summer vegetables. We think it is so good, it will become your go-to "ranch" dressing. And of course, not only is it delicious, but it loaded with health-promoting foods like avocado, fresh herbs, garlic, and citrus. Use it on your salads, veggie snacks, pasta, and even on salmon.



This recipe is flexible and you can use whatever herbs you can find. Fresh herbs will give you more flavor, but if you only have access to dried herbs, just cut the amount in half. I particularly recommend fresh parsley and tarragon, but use what you have! Rosemary and thyme would be delicious, too, but they have woody stems which may need to be strained out afterwards. Similarly, you can use any plain yogurt, or even non-dairy yogurts to make this recipe work for you.


Ingredients

1 cup Greek yogurt

1 medium ripe Hass or similar avocado, peeled and pit removed

1 clove garlic, peeled

1 cup fresh parsley

1 cup fresh mixed herbs (mint, dill, tarragon, basil, cilantro, and/or chives)

2 stalks green onions

zest and juice of 2 limes or 1 lemon

salt and pepper to taste

olive oil or milk as needed


Steps

  1. Place all of the ingredients except the olive oil/milk in a food processor or blender and run until the dressing is smooth.

  2. Add olive oil or milk to thin the dressing down to your desired consistency.

  3. Store in a bottle or air-tight container for up to a week
